Since the domestication of aurochs around 10,000 years ago, human and cattle evolution have been intertwined. Cattle’s ability to convert low quality forage and food industry byproducts into high quality protein means that cattle are expected to play an even larger role in meeting the nutritional needs of a growing global population.

Today, the closest connection most people have with cattle is a glass of milk or hamburger. They may even think of a Nashville or Hollywood’s version of a cowboy or a team mascot.
